Salad in a Jar!
Another amazing picnic idea! Also great for work or school lunches. As long as your dressing doesn’t touch the lettuce, these salads will stay fresh in the fridge for 4 or 5 days!
I just couldn’t resist making these adorable (and healthy!) pizza bites. You can cut out almost all the carbs and fat of a normal pizza by replacing the crust with cauliflower. And yes, it absolutely tastes like a real pizza!
Cauliflower Pizza Bites
16 pizza bites1/2 head of cauliflower, washed and roughly chopped
1 egg white
2 tablespoons low fat cottage cheese
1/4 cup parmesan cheese
1 teaspoon Italian seasoning
1/4 cup mini turkey pepperoniPreheat your oven to 425°. Lightly mist 16 mini muffin cups with cooking spray.
Place the chopped cauliflower in a food processor and pulse until it’s very finely chopped. In a large microwave-safe bowl, microwave the cauliflower for eight minutes. Stir in the rest of the ingredients, then microwave two more minutes.
Evenly distribute the cauliflower mixture between the 16 muffin cups. Press down to firmly pack. Bake for 30 minutes, remove from the oven, and let cool before serving.
